Cucumber Raita


Cucumber – 250 gm

Coriander leaves – 50 gm

Mint leaves – 25 gm

Ginger – 1 ” piece

Green Chillies – 2-3

Yoghurt – 250 gm


Chop cucumber. Add salt to it and leave aside for about half an hour. Meanwhile make a paste of the coriander leaves, mint leaves, ginger and green chillies without water.  If too dry add a little yoghurt.  Beat yoghurt to a smooth consistency. Add the above paste to the beaten yoghurt.  Add salt to taste.  Drain the chopped cucumber and add it to the yoghurt mixture. Adjust seasoning as per taste.  Serve cold as an accompaniment with pulao.
